Date and Walnut Loaf

An authentic Scottish recipe from

A real Scottish tearoom recipe.


- three-quarters cup boiling water
- one cup cooking dates, chopped (without stones)
- one teaspoon baking soda or bicarbonate of soda
- 4 ounces margarine (125g)
- 4 ounces sugar (125g)
- one egg
- half pound/two cups plain flour (250g)
- half cup broken walnuts
- three drops vanilla essence


  • Pour the boiling water over the dates and baking soda - allow to stand.
  • Beat the margarine and sugar together.
  • Add the egg and the flour and mix well.
  • Stir in the dates and the liquid.
  • Add a few drops of vanilla essence and mix well.
Bake in a greased and lined loaf tin for an hour at GasMark3/325F/170C/.
